The last few years of eating healthier and just living an all around healthier lifestyle has been great! Unfortunately in those same years I’ve developed a sweet tooth, so I’ve found a way to curb my cravings and my sons by indulging in homemade desserts that contain healthy ingredients. This Coconut Tapioca Pudding with smoked sesame seeds tastes sooooo AMAZINGGGG!!! It’s become a family favorite!!! It’s healthy, doesn’t use sugar, dairy free, and easy to make!!!

Coconut Tapioca Pudding
Serves 4-6
 
Ingredients:
2 cups almond milk, divided
1 cup coconut milk
1/3 cup tapioca pearls (not instant)
1/4 cup agave syrup
1 teaspoon vanilla
1 teaspoon cornstarch with 1 tablespoon water mixed in
1/4 teaspoon salt
Smoked sesame seeds (optional for garnish, fruit also works great)
You can find smoked sesame seeds in your local supermarket where the spices are sold.

Directions:
In a large bowl, soak the tapioca for at least 4 hours or overnight in 1 cup of the almond milk. When you’re ready to cook, pour the tapioca/ almond milk mixture into a pot. Add the other cup of almond milk and warm the tapioca and almond milk mixture over medium heat. Wait until the pudding is boiling, then add the coconut milk, vanilla, and agave. Cook for another 10 or 12 minutes, stirring continuously.
 
Finally, add the cornstarch-water mixture and salt, cooking and stirring for 5 minutes. Pour the finished tapioca pudding into small glass bowls or a large glass bowl, cover the top with plastic wrap and refrigerate until cooled. Or cool for an hour and serve warm! Right before serving add your smoked sesame seeds or your fruit!
