This power house of a drink contains the superfood known as chia seeds, and it’s really easy to make. I love how refreshing it tastes, and I like to drink it before I work out. My son Jaden says it tastes amazing!

 

Chia seeds are high in protein, they have 5x more calcium than milk, 8x more omega-3 fatty acids than salmon (including high amounts of alpha-linolenic acid), 7x more vitamin C than oranges, 2 tablespoons contain 10 grams of fiber, its also high in antioxidants, iron, manganese and phosphorous. They have the ability to soak up water and get gelatinous. The gel coating over the seed forms a barrier between carbohydrates and digestive enzymes, thus slowing the conversion of carbohydrates to sugar.This means chia seeds are a super hydrating endurance food. The seeds become a super slow release energy source. The gel retains up to 12x the chia seeds’ weight in water, hydrating you and helping maintain your electrolyte balance, especially handy during any physical activity or exercise.

You can try this drink a variety of ways, like substituting the water with coconut water and using different types of fruits.

Ingredients for one glass:

- 1 big glass of cold water (still or sparkling)
- 1 lemon or lime, sliced (or any fruit of your liking)
- 1 teaspoon chia seeds
- Refreshing herbs like mint or basil, I used mint
- Optional to taste natural sweetener of choice – I used agave, but you can use honey, coconut      sugar, etc,…

Ingredients for one pitcher:

- 1.5L cold water (still or sparkling)
-  4 lemons or limes, sliced
- 2 Tbsp chia seeds (you can purchase at Trader Joe’s, Wholefoods, your local grocery store, or online)
- Refreshing herbs like mint or basil, I used mint
- Optional to taste natural sweetener of choice – I used agave, but you can use honey, coconut      sugar, etc,…

Mix all ingredients together well. Leave for 5-10 minutes to allow the chia seeds to soak up water. The longer you allow it to sit, the more flavor you’ll get from your lemon and herbs…yummm! Stir occasionally when the seeds start to settle.

Jaden left this note on the fridge for me before he went to school. I made him this chia drink the night before and left it in the fridge for him.
