I cannot believe the holiday season is just around the corner, wow where did the time go but one of the reasons besides the perfect occasion to see family and friends is my extreme pleasure for cooking. My joy of “home schooled” culinary arts started at 5 years old (or maybe I should say “introduction”, joy came later in the fundamentals of cooking) when my father placed a foot stool underneath the kitchen sink and had me and my sister washing the dishes, because I was taught at an early age if someone is the chef of the meal then the individuals who were entertained should get their butts in the kitchen to clean the after effects. Which for me meant using “elbow grease” because a dishwasher was a luxury that I did not have in my youth, but on the bright side it taught me to appreciate the full process of preparing a meal for family and friends so even till this day if I am a guest for dinner I always clean my own dishes or offer to help in the clean-up process.
Any hoo for all of you food lovers who have a holiday sweet tooth but want the pleasure without the heartache…literally, I have a treat for you! Welcome to one of my all-time favorite gluten, casein (a protein found in all mammals milk that causes small to detrimental allergic reactions for many individuals) & sugar free recipe sites, “The Spunky Coconut”.
Founded by Kelly V. Brozyna, “who began to study nutrition in 2004 when her girls were very young. Her daughter, Ashley, was a baby and Zoe was a toddler at that time. Both girls were not well. Her naturopathic doctor worked with them to radically change their diet by removing gluten, casein, and sugar. Kelly and her husband soon realized that their own health problems could be resolved as well. It was very eye-opening to see how many kinds of issues could be treated with the diet. So, after years of research and experimentation, Kelly now creates food so similar to conventional wheat/dairy/sugar recipes that no one feels deprived. Together, through diet and biomedical treatments, their family is overcoming celiac disease, gluten-intolerance, ADD, and autism with great success. Kelly lives in Boulder County, Colorado with her husband and three daughters.” (via The Spunky Coconut)
“The Spunky Coconut” offers a wide range of holiday classic desserts with a twist.
